The team.
We are a small team. Between us we handle the sourcing, the relationships, and the wines themselves — which means the person who chose a bottle is usually the person you can ask about it.
Shiho Tanaka
Japanese Portfolio Manager
Shiho is from Tochigi. She moved to New York in 2008 to dance professionally, working in restaurants alongside it, and joined Tsukimi as an opening team member in 2019. Wine found her there. What drew her in, she has said, was how much it had in common with dance.
She became Tsukimi’s head sommelier, a certified sommelier and kikizake-shi, and helped build the Japanese wine program the restaurant is known for. A 2024 episode of Japan Eats! introduced her as one of the most knowledgeable sommeliers of Japanese wine in the country. She manages our Japanese portfolio and works with our producers directly, in Japanese.
Georges Kalligeros
Portfolio Manager
Georges came to wine in Paris, working at Liquiderie, La Quincave and Le Rubis and learning the natural wine scene from the inside.
He manages our portfolio and runs our sourcing in France, where he travels several times a year to taste with growers and find the ones we haven’t met yet. He works in French. A fair number of the producers in our book started with a message he sent on Instagram.
