The Restaurant
Den (傳) is chef Zaiyu Hasegawa’s flagship restaurant in Jingumae, Shibuya — at 2-3-18 Jingumae, a short walk from Gaienmae Station. The restaurant has held two Michelin stars in the Tokyo Guide since 2014 and was awarded the Michelin Green Star for sustainable gastronomy. It has appeared multiple times on the World’s 50 Best Restaurants list.
Cuisine
Den’s cuisine is best characterized as playful inventive Japanese. The omakase menu features signature dishes like:

Why It Matters
Den is one of perhaps a half-dozen Tokyo restaurants where Japanese fine dining and Japanese fine wine meet at the highest level.
