At Aquila Cellars we are working with landowners in the Northfork Valley, through long-term lease agreements and consulting, to rehabilitate neglected and abandoned, own-rooted vineyards. We are dedicated to an ecological approach to sustainable agriculture that utilizes practices and preparations from the biodynamic school of farming, focusing on low-input agriculture, positive compounding actions and maximizing biodiversity. Over 99% of all vineyard inputs are handcrafted botanical teas and fermentations, made with herbs hand harvested throughout the valley. All of our fruit is handpicked primarily from calcareous clay soils and processed in our passive cellar constructed by Clement Fougnier in 1927. In the cellar, we craft wines that reflect our cool-climate terroir through spontaneous fermentations and minimal manipulation. Our goal is to make living, unfiltered wines that favor energy over power, freshness over richness. Our wines are uniquely Coloradan, grown at the highest elevations of North America and produced with highest vibrations.
