Domaine Tetta is a pioneering natural winery on a limestone karst plateau in Niimi, northwest Okayama Prefecture. Founded by Ryuta Takahashi, who left the local mining industry in 2009 after discovering abandoned vineyards in his hometown, the estate practices fully integrated domaine-style production from vine to bottle. The 8-hectare vineyard sits at 400-600m elevation on rare calcareous soils mixed with terra rossa red clay — a geological profile comparable to some of France's finest wine regions. An innovative rain-shelter system using white vinyl covers protects against Japan's heavy rainfall while reducing disease pressure naturally. In the cellar, the team uses wild yeast fermentation, gravity-flow handling with small ladles instead of pumps, no added sugars or acids, and only trace sulfites. Wines are aged in disused limestone tunnels at a constant 12-15°C year-round.

Domaine Tetta farms 8 hectares of vines on a limestone karst plateau at 400 to 600 metres in Niimi, Okayama, on land owner Ryuta Takahashi reclaimed from abandoned farming. The estate started in 2016 with the explicit goal of regenerating local farmland through wine. Aki Queen is a Japanese black-grape hybrid (a parent variety of Muscat Bailey A) that suits the Niimi limestone and altitude. The 2023 release is a rosé built around 85% Aki Queen and 7% Muscat Bailey A, vinified with native yeasts and aged in former limestone mining tunnels held year-round at 12 to 15°C and 80% humidity. 12% alcohol, no added sugar, no added acid. A distinctive rosé from one of Japan's most terroir-driven projects.
Whole-bunch fermentation in stainless steel with native yeasts, no destemming or crushing. Gentle extraction and minimal intervention throughout. Aged in tank and bottled with 15 ppm SO₂.

Muscat Bailey A is the workhorse Japanese black grape, but at Domaine Tetta it receives the full estate treatment: 8 hectares of vines on a limestone karst plateau at 400 to 600 metres in Niimi (Okayama), gravity-flow cellar design, native-yeast fermentation, no added sugar or acid, ageing in former limestone mining tunnels held year-round at 12 to 15°C and 80% humidity. Owner Ryuta Takahashi started Tetta in 2016 with the explicit goal of regenerating abandoned farmland through wine. 12% alcohol, hand-picked, restrained extraction. The result is a precise, place-driven take on a grape better known for cheap supermarket bottlings: red-fruited, herbal, light-bodied, with the limestone signature pulling tension into the finish.

A lightly sparkling 'Perlant' led by Chardonnay with a splash of Pinot Gris and aromatic varieties, whole-bunch pressed and bottle-conditioned on Tetta's limestone estate. Lychee, muscat, green apple and white peach lead a gently fizzy, aperitif-styled palate with clean acidity, subtle skin-contact texture and a mineral edge.

A lightly sparkling rosé 'Perlant' of Merlot with a touch of Cabernet, whole-bunch pressed to juice and bottle-conditioned on Tetta's Okayama limestone. Orange-tinged pink, with kirsch, passion fruit and grapefruit over wild white flowers and chalk, and a firm, gently tannic, gastronomic finish.

'd'Or' is Tetta's barrel-aged Chardonnay, made from golden, late-picked fruit on Okayama limestone, wild-fermented and given around five months in oak with minimal sulphur. Pale gold, with concentrated honeyed-lemon, dried and tropical fruit and apricot confiture framed by elegant oak, dense fruit and a long, mineral, finely acidic finish.

Deep ruby, with ripe red fruit, raspberry jam and cassis liqueur, a note of barrel-derived cocoa and a cool menthol lift over moderate, well-knit tannins.
