Euforia

Jan Klimeš has created the 0% ABV alternative beverage for the natural wine world. He crafts naturally sparkling soft drinks made with birch sap and encapsulated maceration ingredients including seeds, flowers, berries and more. A gradual process of lactic fermentation after bottling (think pet-nat) creates a naturally carbonated drink. There is no added water, sugar, preservatives or artificial colors. The beverages are unpasteurized and unfiltered. Jan is pioneering a new category of non-alcohol beverage and quickly inspiring a producers around the world to create their own lacto-fermented zero-alcohol sparkling beverages. He works closely with famed Czech natural winemakers Milan Nasterac and Dluhe Grefty--and even makes cuvees with their grape-skins. Some tips from Jan: Shake the bottle a bit before opening. I find that the older the Euforia is, the better it drinks. I opened some cellared bottles now and they are tasting even better after 2-3 years: they have more acid and the flavors are more in balance.
