Shiojiri’s small-domain Merlot benchmark — Akihito Kido’s family operation that helped redefine Kikyōgahara
The Producer
Kido Winery (Kidoワイナリー / 城戸ワイナリー) was founded in 2004 in Shiojiri City, Nagano Prefecture, by Akihito Kido (城戸亜紀人). Kido studied at Yamanashi University’s Wine Science Research Center, then spent eight years at a Shiojiri-area commercial winery before deciding to launch his own estate. The operation began as a three-person family business with his wife Yukiko and his father Hisashi, and remains tightly family-run today.
Methodology
Kido’s key methodological choice was vertical trellis (垣根栽培, kakine-saibai) rather than the regional traditional pergola (棚式, tanashiki). His reasoning: vertical trellis concentrates the soil’s character into fewer, smaller bunches, producing more expressive single-variety wines. He combined this with no-herbicide grass-cover farming, hand-tended canopy management, and conservative yield targets.
The estate works almost exclusively with Merlot, Chardonnay, and Pinot Noir. The Merlot — vinified on the Bordeaux model with measured oak — has become the small-domain reference for Kikyōgahara, frequently outperforming larger commercial estate Merlots in blind comparisons.
Why It Matters
Kido demonstrates that small-domain Bordeaux-variety production at international quality is achievable in Nagano. He is the proof of concept that Kikyōgahara’s historical reputation for Merlot — established by Mercian and Suntory in the 1980s — is not a corporate-scale phenomenon. The success of his operation is one reason small-domain Merlot in the Kikyōgahara has become economically viable.
He is also one of the most articulate spokespeople for the small-domain Japanese wine generation, with frequent interview presence in Japanese wine media.
