F.O.S. — 'Fermented On Skins' — is the wine widely credited as Japan's original orange bottling, made since 2004 from 100% Koshu given a long skin maceration in tank and clay pot. Bright amber in the glass, with persimmon, yellow peach and mandarin over black tea, clove and toast, and a phenolic, deeply savoury grip.
