About this wine

A 100% estate Chardonnay grown on Tada's own farm in Furano, Hokkaido, wild-fermented and unfiltered yet remarkably clean, with SO2 only at bottling. Good nose, elegant and mineral-driven with fine acid lift — the standout of the estate's range.

Winemaking

Chardonnay trained to unilateral horizontal cordon on an alluvial fan, vines 8–14 years old. Hand-harvested 7–10 October 2024 at 21.53° Brix and pH 2.97. Damaged and rotten fruit removed by hand, then pressed gently at low pressure as whole bunches. Roughly 24 hours of débourbage, followed by 22 days of spontaneous fermentation on indigenous yeast in synthetic resin tanks. Aged about 9 months, 36% in used French oak and 64% in stainless steel. No acidification, no chaptalization, no fining, no filtration. SO2 added only in the minimum quantity needed at bottling, to avoid negative reactions in bottle.
